Harvested in the 11th lunar month (winter), these organic jujubes are freeze-dried naturally while still hanging on the tree during the cold northern Chinese winter — a rare traditional method known as “冬月吊干”(dong yue diao gan). In the crisp, dry winters of northern China, this traditional, slow-drying process concentrates their sweetness and locks in their nutrients.
